Chocolate mousse

 Any chocolate mousse that includes whipped cream in the ingredient list is not real mousse and I will die on that hill.


Ingredients

200 dark chocolate

30g butter

4 eggs, separated

50g sugar


Method

Melt the butter and chocolate in a saucepan, over very low heat.

Whisk the egg yolks and sugar until thick and doubled in volume. Use an electric whisk, it's easier.

Add the chocolate mixture to the egg/sugar mixture and stir until completely combined. The mixture will be fairly thick.

Whisk the egg whites until very stiff, then gradually and carefully add it to the chocolate mixture. Don't over beat. 

Let it rest in the fridge so it sets a bit. Try not to eat the whole thing at once (easier said than done.)
