Galette Charentaise

This cake is from my native département of Charente-Maritime in the South West of France. It is fairly stodgy, but very flavourful. 

I recommend not to omit or substitute the Cognac, as this is a liqueur from this specific area of France.

Ingredients

  • 250g flour
  • 250g sugar
  • 125g butter, melted
  • 2 eggs
  • 1/2 packet of vanilla sugar
  • 1 tbsp Cognac
  • 1/2 packet of baking powder (5 grams)
  • 1 egg yolk
  • Candied angelica (angélique confite)
  • Pinch of salt


Now this is the one I made. Doesn't it look wonderful!


Method

In a bowl, combine the flour, sugar, melted butter, baking powder, whole eggs, Cognac, salt, and around 15 pieces of angelica.

Let it rest for 20 minutes.

Pour into a buttered and floured tray. Spread the egg yolk on top and make nice shapes with a fork (for decoration).

Bake in a 180 degree preheated over for 20 to 25 minutes, or until the knife comes out clean.
