Galette Charentaise
This cake is from my native département of Charente-Maritime in the South West of France. It is fairly stodgy, but very flavourful.
I recommend not to omit or substitute the Cognac, as this is a liqueur from this specific area of France.
| Disclaimer: This galette was made by my friend, not by me. But I'm sure it's equally delicious! |
Ingredients
- 250g flour
- 250g sugar
- 125g butter, melted
- 2 eggs
- 1/2 packet of vanilla sugar
- 1 tbsp Cognac
- 1/2 packet of baking powder (5 grams)
- 1 egg yolk
- Candied angelica (angélique confite)
- Pinch of salt
Method
In a bowl, combine the flour, sugar, melted butter, baking powder, whole eggs, Cognac, salt, and around 15 pieces of angelica.
Let it rest for 20 minutes.
Pour into a buttered and floured tray. Spread the egg yolk on top and make nice shapes with a fork (for decoration).
Bake in a 180 degree preheated over for 20 to 25 minutes, or until the knife comes out clean.
