Carrot cake




Ingredients

3 eggs – separated, whisked until the whites are stiff.

50g flour 

125g carrots 

125g sugar 

10 ml lemon zest

150g walnuts

Half a tsp of baking powder

Spices: ginger, cinnamon, nutmeg...

 

Method

Mix the egg yolks and sugar together.

Add the flour, carrots, sugar, walnuts, lemon zest, baking powder and spices. Stir well, then add the egg whites carefully.

Bake at 180 degrees for 40 min. Add whatever icing you like on it.
