Algerian couscous (Vegetarian)

 This is the stew to serve with the couscous grain. 


Ingredients

For the stew

1 big onion, sliced

2 carrots, cubed

1 or 2 turnips (or some swede), chopped

1 courgette

200g chickpeas

1 garlic clove

One tin of peeled tomatoes

Olive oil


For the spice mix: 

(My mum never told me the exact quantity for each spice, so I wing it everytime.)

Pepper

Chili powder

1/2 tsp ground cumin

1tsp ground ginger

1 clove

Seeds of 3 cardamon pods

Paprika

Ground coriander

Turmeric

A tiny bit of nutmeg


Method

Cook the onion and garlic in the olive oil until slightly soft. Add the spice mix and stir well.

Add the carrots, chick peas, turnip/swede and tomatoes. Add a bit of water (roughly 200ml at first) and salt.

Let it simmer for 15 minutes, then add the courgettes. It's ready when all the vegetables are fully cooked (soft). Check regularly and add water if it becomes dry.

Serve with thin/medium plain couscous grain, a raisin and onion garnish, and some harissa.
